Down By Law Sparkling Riesling - 2018

With Down By Law, Josh and Noah make their case for Riesling as a raw material for world-class sparkling wine. We’re sold. Instead of the broad texture of Chardonnay, this has a retina display-like clarity. The duo sources their Riesling from the Zabala family, multi-generational grape growers with roots in California that date back to the 18th century. The block Noah and Josh work with was planted in the 1970s. They fermented the wine in neutral French oak, and apply (mostly) traditional champagne methods.
