2019 was a cool one up in Washington’s Yakama Valley, which resulted in more acidity and freshness overall. In a display of ingenuity and a commitment to their minimalist ideals, Kate and Tom chose to add inactive carbon (organic and non-animal based) instead of additional sulfites when faced with a sluggish fermentation. This instance reflects the type of difficult, fast-paced decisions winemakers are required to make in the cellar, and the result of this one is a more soulful and gratifying wine. 12.8% alcohol.
