Steve and Jill's attempt at an archetypal white wine blends four varieties (50% Sauvignon blanc, 25% Ribolla Gialla, 20% Semillon, and 5% Tocai Friulano) and two vineyards. Ryans and Bengier are both cool, foggy sites in southern Napa. Immediately following fermentation, the four varieties were blended and aged on their lees in Boutes oak barrels (15% new), known for their emphasis on transparency. Malolactic fermentation was blocked through filtration to preserve the wine’s natural acidity.
