Napa Valley White 2018
Here Steve attempts to create an archetypal white wine, inspired by the great whites of Friuli. It’s an intentional blend of four varieties: roughly 50% Sauvignon Blanc, 25% Ribolla Gialla, 20% Semillon, and 5% Tocai Friulano; and two vineyards: Ryans and Bengier — both cool, foggy sites in southern Napa. Immediately following fermentation, the four varieties are blended and aged on their lees in Boutes oak barrels (15% new), known for their ability to preserve transparency. Malolactic fermentation was blocked through filtration to preserve the wine’s natural acidity.
