Production Notes

A historically significant grape variety grown in one of the oldest vineyards in California. Located in the Lime Kiln AVA, the Enz Vineyard is organic and dry-farmed with original plantings dating back to the late 1800s. The Zinfandel macerated for 3 hours after getting foot tread upon arrival in the winery. It was then transferred to stainless steel tanks to settle overnight and continue the fermentation process. The wine then spent 4 months in oak barrels before bottling, where secondary fermentation and the sparkling magic began. 4 barrels produced. 12.8% abv.
