Trousseau is native to France’s Jura region, but Mike’s comes from the organically farmed St. Amant Vineyard in the Sierra Foothills, the parched inland mountains of California Gold Rush fame. Mike’s method here is particularly inspired: he takes a “full carbonic” approach, placing whole clusters of grapes into sealed vats for six weeks and letting them ferment from the inside out.
