Melon de Bourgogne, the grape of Loire’s gloriously briny Muscadet wines, is famed not so much for its acidity as for its firm minerality, which makes it a perfect study for anyone trying to understand the difference between the two. Thankfully, you can do so affordably, as Melon de Bourgogne still represents of the wine world’s greatest secrets. Justin Willett channels all of this in his rendition, sourced from the legendary Bien Nacido Vineyard in the Santa Maria Valley.
